
A quick-to-make couscous using chorizo fat instead of frying oil is the best way to reduce fat in this dish.
| couscous (pour a same amount of boiling water over into couscous and cover and leave to stand until needed) | |
| chorizo sliced | whatever |
| garlic clove chopped | whatever |
| British garden frozen peas | whatever |
| salty garlic granules (optional) | half tsp |

Dry-fry the chorizo at a low heat for 2-3 mins till fat is coming out, set to one side. Add chopped garlic for 2 mins, toss occasionally.

Add two eggs, stir it till flake.

add couscous, peas, chorizo back to pan, mix well. Serve topped with the garlic granules.
