| Vegetables : diced | ripe tomatoes, cucumber, red onion,capsicm |
| herbs: finely chopped | arsley,mint, coriander, chilli |
| optional: nuts & dried fruits | |
| olive oil &1 lemon juice & salt & pepper |
In a salad bowl: Add 1/2 cup couscous & pinch of salt & 1tbsp oil Pour in 1/2 cup boiling water : cover--5-10minutes separate ( fork) *Add 1 tbsp tomato puree
add the vegetable & herb & option add olive oil & lemon juice & season. fridge until ready to serve.
