| pitted medjool dates | 1 cup (about 12) |
| Water | 1 cup |
| Oat flour | 1 1/4 cup |
| baking powder | 1 tbsp |
| non-dairy milk | 1/4 cup |
| vanilla extract | 1 tsp |

1. Preheat the oven to 350F. 2. In a blender, combine the dates and water. Blend until smooth. 3. Add the vanilla extract, baking powder, oat flour, and non-dairy milk. Blend until well combined.

1. Spoon the batter into 6 lined muffin tins. Fill them 3/4 of the way, and smooth the tops. 2. Bake at 350F for approximately 25 minutes. 3. Remove from the pan and let them cool completely before frosting.
