| yellow cornmeal | 2/3 cup |
| Oat flour | 1/3 cup |
| Maple syrup | 1 tbsp |
| Baking powder | 1 tbsp |
| Non dairy milk | 2/3 cup |
| Salt | a pinch |
| Berry Compote | ----------- |
| Fresh or frozen cranberry/blueberry/raspberry | 1 cup |
| Water | 1/4 cup |
| Orange zest* | 1 tbsp |
| Maple syrup | 3 tbsp |

Add cornmeal, oat flour, maple syrup, baking powder and sea salt to a medium to large mixing bowl and whisk to combine. Add non dairy milk a little at a time to the dry ingredients and gently stir until just combined.

Add berries, water, orange zest and maple syrup to small to saucepan and bring to a simmer over medium heat. Lower heat and simmer for 5 minutes, stir frequently.

Scoop 1/4 cup batter onto a non-stick pan. Cook until bubbles appear, about 3-4 minutes. Cook for another 2-4 more minutes on the other side.

Serve hot with berry compote.
*Orange zest + 1/4 cup water = 1/4 cup orange juice
