| yellow onion | 1 large |
| garlic | 3 cloves |
| carrots | 1 pound |
| Salt and Pepper | a pinch |
| Water | 4 cups |
| Turmeric | 1 tsp |
| Cayenne pepper | 1 tsp |

Dice 1 onion. Mince 3 cloves garlic. Scrub and dice 1 pound carrots.

1. Heat a large pot over medium heat. Sauté onion and garlic. Add carrots and cook for 5 minutes. 2. Season with a pinch each salt and pepper, turmeric, and cayenne pepper, then add 4 cups of water and stir. 3. Bring to a low boil, then reduce heat to a simmer. Cover and cook for 30 minutes.

Use an immersion blender and blend until smooth and creamy.

Serve with your choice of toppings.
