| cobs of corn | 2 |
| red bell pepper,diced | 1 |
| small red onion, diced | 1/2 |
| cherry tomatoes | 1/2 cup |
| chopped avocado | 1 |
| chopped coriander | 60 ml |
| fresh squeezed limejuice | 30 ml |
Slice corn kernels off the cob and separate them into a large bowl. Add in pepper, onion, tomatoes, avocado, cilantro and limejuice. Season with salt and pepper and gently toss until everything is mixed together.
