Italian Meatballs Spaghetti 意大利肉丸面的食材和调料

Pasta Dough(by Thomas Keller) 意面面团
Flour 面粉1 3/4 cup
Egg Yorks 蛋黄6
Whole egg 全蛋1
Olive oil 橄榄油1 1/2 tsp
Milk 牛奶1 tbsp
Meatballs 肉丸
Ground beef 牛肉1/2 lb
Ground 猪肉1/2 lb
Panko bread crumbs(ground)面包糠1/4 cup
Eggs 鸡蛋1
Parmesan cheese 帕玛森干酪1/4 cup
Garlic(chopped and sauteed)3 cloves
Onion(sm dice and sauteed) 洋切小粒1/2 cup
Parsley(chopped) 香叶切碎1/4 cup
Salt 盐TT
Pepper 黑椒粉TT
Vegetable Oil 蔬菜油For cooking
Tomato Sauce 番茄酱汁:
Onion 洋1 cup
Garlic(chopped) 4 cloves
Tomato sauce 番茄沙司1 cup
Whole tomato(canned) 罐装番茄3 cups
Fresh oregano 新鲜牛至1 tbsp
Fresh thyme 新鲜百里香1 tbsp
Salt, pepper 盐,黑椒粉TT
Olive Oil 橄榄油2 tbsp
White wine 白葡萄酒1/2 cup

Italian Meatballs Spaghetti 意大利肉丸面的做法步骤

  1. 第1步.

    先做面团。在面粉上挖一个洞,倒入混合好的湿料,用叉子把面粉往里拨,慢慢搅拌成一团。拿出放在案板上揉面5分钟直至用手指按压后不回弹。用保鲜膜包裹后醒面30分钟。

  2. 第2步.

    接着做番茄酱汁:In a sauce pan, heat olive oil and cook the onions and garlic. 橄榄油在锅中加热,倒入洋葱和蒜。

  3. 第3步.

    Once they are golden brown, deglaze with white wine. 洋葱和蒜炒至焦黄后倒入白葡萄酒炝锅。

  4. 第4步.

    Add the tomato sauce, whole tomatoes, oregano and thyme. 加入番茄沙司,罐装番茄,牛至和百里香。

  5. 第5步.

    Let the sauce simmer for about 30 minutes. Season to taste with sugar, salt and pepper. 慢火煮30分钟,加糖、盐和黑椒调味。

    做肉丸:In a saute pan, heat the oil and cook onions and garlic until golden brown. Remove them from the heat and allow to cool. 洋葱和蒜入锅炒至焦黄,移至一边放冷。

    In a bowl, combine the meat, cheese, egg, parsely,bread crumbs and onion mixture. Season with salt and pepper. 将肉丸配料中的肉、奶酪、鸡蛋、香叶、面包糠和炒好的洋葱混合,加盐和黑椒调味。

    Once the tomato sauce has been cookin for 15 minutes, add the meatballs to the sauce and allow to cook together for another 20-30 minutes. 番茄酱汁烧至15分钟时下肉丸,一起再煮20-30分钟。

    面团取出做面条,分四块,用压面机1档压4次,然后3档、5档、7档各一次。洒面粉晾干,再加细面条头摇出面条。水烧开放入盐和橄榄油,下面条煮3分钟。

    Serve the meatballs and saue with fresh spaghetti garnished with parmesan cheese. 面条放入酱汁中拌匀后装盘,洒上奶酪和香叶装饰。
