Bagels的做法说明

How did bagels get their holes? The bagel originated in 1683, when a Jewish baker 👨‍🍳 from Vienna created them as a gift for the 🤴 King of Poland to celebrate his victory over the Turks that year. Fashioned in the shape of a stirrup, the bagel commemorated the victorious cavalry charge. Thus the name bagel originated from the Polish word ‘beugal’ for stirrup. Bagels are boiled then baked to give them a chewy texture, a soft brown crust and of course, a hole. They are best topped with melted butter and jam or my favorite, creamed cheese and smoked salmon.

Ingredients for 12 bagels.

Bagels的做法步骤

  1. 第1步.

    In a large bowl,dissolve yeast in warm water with 🍯 honey. Let the liquid rest in a warm place for 10 minutes, until it is bubbly and smells yeasty.

  2. 第2步.

    Mix in salt and slowly add the flour until the dough comes together into a blob. It should still be soft and slightly sticky to the touch.

  3. 第3步.

    Sprinkle some flour onto a clean work surface and knead with vigor for 10 minutes.

  4. 第4步.

    Grease a large bowl with vegetable oil. Place the dough in the bowl and cover with a damp tea towel.

  5. 第5步.

    Let it rise until double in volume, about 1½ to 2 hours.

  6. 第6步.

    After the first rising, cut into 12 pieces and shape dough into 12 small balls.

  7. 第7步.

    Poke your thumb through the centre of the balls and stretch them to create rings. Let rise on a greased sheet for 20 minutes in a warm place.(这一步可能是为了适应孩子,做的过于简单粗暴,现在都是擀成牛蛇卷起来再整形)

  8. 第8步.

    In a 2 liter saucepan, bring water to a gentle boil. Add 30g(2 tbsp) sugar to water. Boiling gives bagels their characteristic chewy crust.

  9. 第9步.

    Boil bagels 2 or 3 at a time for 30 seconds on each side and then drain them on towel. If bagels do not float on the surface o the water, then they need to rise for a bit longer before boiling.

  10. 第10步.

    Place bagels on baking sheet with cornmeal or semolina flour to keep them from sticking. Brush bagels with egg white diluted with 15 ml (1 tbsp) water to make the tops shiny. You can sprinkle bagels with sesame seeds, poppy seeds or coarse salt if desired.

  11. 第11步.

    Baking in a preheated oven at 200℃ /400℉/Gas Mark 6 for 20 minutes or until golden brown.(这里温度设定要根据自己烤箱状况来定,我认为170℃-180℃就可以,可以适当延长5-10分钟烘烤时间)

  12. 第12步.

    Let cool, slice in half and serve.
